chicken curry recipe is awesomeness. this is a very popular dish in India which is made on a daily basis. apart from chicken curry is made different ways like Dhaba style chicken curry, chicken curry with coconut etc., but this chicken curry is simple and easy compared to all of these. this is delectable and chicken turns soft, tender and juicy. this is a pleasant combination of taste and aroma.
chicken curry is made from basic ingredients which are used every day. this is an accessible recipe and everyone can prepare it very easily at home. this goes very well with steamed rice, butter naan, and roti or paratha and can be served as lunch and dinner.
I am sharing chicken curry step by step in my style which I have prepared in my home. I make chicken curry often for dinner and prepare it with roti. the making process of this recipe is very easy and do not add extra ingredients. only use day-to-day ingredients. I learned this recipe from my mummy. She makes this for her family and now I make it for my family. I have mentioned certain ingredients and recipe details below step by step with photos. I hope you like it.

chicken – 500g (with bones)
oil – 4 tablespoons (mustard oil)
onion – 3 medium sizes (roughly chopped)
tomato – 1 large size (chopped)
garlic – 10 to 15 cloves (crushed or paste)
ginger – 1 inch (crushed or paste)
turmeric (haldi) powder – 1 teaspoon
chilly powder – ½ teaspoon
kashmiri red chilly powder – 1 teaspoon
coriander (dhania) powder – ½ teaspoon
cumin (jeera) powder – ½ teaspoon
garam masala powder – 1 teaspoon
salt – as per taste
some coriander leaves – chopped, for garnish

bay leaves (tejpatta) – 2
dry red chilly – 2
cloves – 4
green cardamom (elaichi) – 4
black cardamom (elaichi) – 1
cinnamon (dalchini) – 1 inch
jeera seeds – 1 teaspoon
dhania seeds – 1 teaspoon (crushed in 2 pieces)
curry leaves – 10
place the chicken in a bowl. wash thoroughly and drain off the water completely. marinate the chicken pieces with salt and Kashmiri red chilly powder. cover and set aside after 10 minutes. now prepare all ingredients. cut onions roughly or chopped. grate ginger and garlic or make the paste and chopped tomato also. keep all separate.
heat oil in a pan, add all whole spices and sauté for few seconds.(Flame should go medium heat).
after a couple of seconds, include crushed ginger-garlic or paste and cooked well until 30 seconds.
then add onions and fry evenly until golden brown.
when onion goes brown add powdered spices ( haldi powder, lal mirch powder, dhania powder, jeera powder; except garam masala powder) and mixes well till about 30 seconds. then pour little water in spices amount of 2 spoons. stir together and fry again 4 to 5 minutes.
after this add chopped tomato and fry until it goes messy. then add little water again and stir well. (adding water to onion and all ingredients makes them soft and juicy).
now through the chicken in pan and mix well and fry 6 to 8 minutes.
after 10 minutes chicken and all ingredients are fries properly and chicken turns soft and got pleasant aromas. the oil starts to surface then add garam masala powder and mix well. (you can add garam masala after the chicken is cooked completely.)
pour warm water over the chicken (you can add water, as per your required gravy). I have added 1cup of water. sprinkle salt as per taste and Cook chicken on medium heat 8 to 10 minutes by covering with a lid.
after 10 minutes open the lid and let’s check if the chicken is completely cooked or not. If you have any doubt take a piece of chicken and place on a plate and prickle with a fork. It should be soft and should come off from the bones easily. but in my sight, chicken takes 10 minutes for it to be completely cooked and when gravy has reached desired consistency, then switch off the flame. If you have doubt cook it once for 5 minutes.
now your delicious Indian style chicken curry recipe is ready. garnish it with chopped coriander leaves and serve hot with rice, roti or naan, whatever you like.
- I’ve added little-powdered spices because I don’t like more spices. But you can add spices according to your taste.
